Creamy Potato Salad

10 servings

6 med. round red or white potatoes
1 1/2 cups mayonnaise or salad dressing
1 Tbsp. white or cider vinegar
1 Tbsp. yellow mustard
1 tsp. salt
1/4 tsp. pepper
2 med. stalks celery, chopped
1 med. onion, chopped
4 hard-cooked eggs, chopped

Boil potatoes until soft; let cool.
Mix all ingredients in a medium bowl. Refrigerate until ready to serve.
