Parsnips
Selection - Parsnips should be firm and smooth and still have their greens attached.
Storage - Store parsnips in a cool environment, such as a cellar. If storing in the fridge, place in a plastic bag.
Preparation -Scrape or peel. Either leave whole or cut into strips or pieces. Boil pieces covered for 10-15 minutes until tender. For strips, boil for 7-9 minutes. Or steam pieces covered for 15-20 minutes and strips for 8-10 minutes.
To microwave: Place in 1-quart casserole with 2 Tbsp. water. Cover and microwave for 5-6 minutes until tender, stirring once. Let stand for 2 minutes.
Nutritional Information - Parsnips have a very good supply of complex carbohydrates and fiber. Each serving size, 1/2 cup (boiled), has 63 calories.
