Onions
Selection - Choose onions that are firm with unblemished, papery skin and no signs of sprouting.
Storage - Store onions in a cool, dry place out of direct sunlight (which may cause sprouting). Wooden onion storage boxes are ideal.
Preparation - Peel onions in cold water to prevent your eyes from watering. Cover and boil for 15-20 minutes for small onions, 30-35 minutes for large onions until tender. Or steam covered for 15-20 minutes for small onions, 30-35 minutes for larger onions, until tender.
To microwave: Place in 1 1/2-quart casserole with 1/4 cup water. Cover and microwave for 7-9 minutes until tender. Let stand for 2 minutes.
Nutritional Information - Onions provide fiber and folate. One serving size, 1/2 cup (boiled), has 30 calories.
Benefits - Onions are high in folate, which is beneficial for pregnant women.
