Savoy Cabbage
Selection - Unlike other cabbages, savoy has a rough, bumpy texture, and the head isn't as firm. Choose a head that has a nice, healthy green color. Outer leaves should be free of blemishes.
Storage - Refrigerate and it will keep for months.
Preparation - Wash leaves and chop fine. Boil or steam.
Nutritional Information - Savoy cabbage is a great source of fiber, which reduces constipation. Contains a good amount of both vitamins A and C to improve the immune system. One 1/2 cup of shredded and boiled savoy has 18 calories.
