Selection - Choose
heads that are compact, firm, and that have dark green outer
leaves that look healthy.
Storage - Store lettuce
in plastic in the crisper drawer of your refrigerator. Keeps
about seven days.
Preparation - Lettuce
should be washed and then completely air-dried, spun in a
salad spinner, or blotted with paper towels to remove excess
water. Do not soak lettuce. Too much water will soften the
leaves.
